This unimaginably Fresh-Hopped IPA was brewed with newly harvested Strata, picked up from nearby Crosby Hop Farm. Mere hours later they were added to our custom “hop back” tank, capturing the fresh hops’ aroma oils. The result is a bold, resinous trophy catch bursting with hop notes of ripe orange and tangerine.

Our Annual “Farm-to-kettle” brew features freshly harvested hop flowers driven straight from the field to the brewery. Totaling over 10 lbs. per barrel, we layer in late additions from the whirlpool through fermentation, to extract as much hop oil as possible. This year’s edition features hop superstar Citra, well known for its distinct rich ripe mango, juicy peach, and citrus flavor profile. Appropriately, the malts take a backseat and allow the star of the show to shine.

Brewed with fresh Simcoe hops, this IPA is full-bodied, resinous, and piney. Citrus ­flavors of orange and grapefruit mingle with a light malt sweetness. Inhale deeply to experience the bold, dank aroma of this year’s crop. Supplies are limited, so make sure you find a good hiding spot...your roommate that dropped out last semester won’t be able to help himself when he finds your Head Stash.

Ingredients: Made with a proprietary blend of grains, fresh Simcoe hops from Loza Farms, and a proprietary blend of kilned hops.

Ferment Fresh Hop Chinook Pale Ale

There is something special about Chinook hops. Embraced for their distinctive fruity and spicy evergreen notes and a splash of rich grapefruit Chinooks are balanced by a subtle woody earthiness in this golden pale ale. Once a year in the Northern Hemisphere, we get to brew beer in it's purest form. Hop cones, cut from the trellises, are immediately collected by bleary-eyed brewers on a pre-dawn mission. Once back at the brewery, fresh hop cones are crammed into a fermenter with freshly brewed American pale ale to extract the magic that is the fresh hop brew.

Ingredients: Rahr old world pilsner malt and fresh Chinook hops from Coleman Farms.

Ferment Fresh Hop Centennial Pale Ale

Pale Ale featuring fresh Centennial hops that were harvested from Coleman Farms in Woodburn, Oregon, trucked back to the brewery the same day as harvest, and immediately packed into a fermenter containing a freshly brewed American Pale Ale. The base beer is brewed with Rahr Old World Pilsner malt and malted wheat, making way for a big peach, grapefruit, and distinct fresh hop character.

Ingredients: Rahr old world pilsner malt, malted wheat and fresh Centennial hops from Coleman Farms.

Fresh Hop Double Hazy IPA: The forecast is calling for 100% chance ofwet Strata accumulation. This All-Strata double dry hopped Hazy DIPA has a sticky deluge of hop flavor and aroma with notes of tropical fruit, grapefruit, and cannabis. ABV 8.7% IBU 46

Ingredients: use of proprietary malt, fresh Strata hops from Indie Hops, and kilned strata pellets in the boil, and fresh strata in both the boil and dry-hop.

Here in Moxee, Washington, September means harvest: coordinating with the barley maltster as the fruity, herbal smells of fresh hops being cut and kilned waft in our windows. Now in our third season as barley farmers and 90 years after the first hops were planted on our family farm, we're proud to share with you this Homegrown IPA featuring our homegrown hops and barley. Notes of ripe lemon, grapefruit, blueberry, pine resin, and fresh-cut grass.

Ingredients: Homegrown Pilsner, Pale, and Dextrine malts; fresh Simcoe hops from Loftus Ranches, and kilned Simcoe, Mosaic, Citra hops.

Fort George CoHoperative Ale

Every year, local folks with hops growing around their houses, garages, gardens, and farms, bring them down to Fort George on the 2nd Wednesday in September. The brew staff and our hop donors enjoy some pints in the sun while they pick them from the bines. The next day, CoHoperative Ale is brewed with all of those donated wet hops. It's always a draft only, local release at the pub. But everyone who drops off hops gets to take home a growler and a tshirt.
