In the ongoing series of releases from Portland’s Von Ebert Brewing, the brewers are happy to announce the latest in their Heritage Beer program - Bouquet Blanc.

Available this Friday, Blanc is a blend of two unique base beers, which aged away in oak puncheons and brettanomyces. Besides Brett, the brewers added a copious amount of Sauvignon Blanc juice and white chrysanthemum flowers, shortly before the beer was transferred into bottles.

"When we make these beers that use wine grapes, we really like to see where we can take them," said Von Ebert Glendoveer’s Head Brewer, Sean Burke. "In some areas of wine making there are rules or traditions that are followed. We get to explore the boundaries of these rules and traditions and bring in some beer making techniques and ingredients that might not typically be used. It allows us to be infinitely creative with our approach to both the flavor and experience of these beer/wine hybrids."

To make a beer like Bouquet Blanc, the beer is first aged in stainless steel brewery vessels, before being moved into oak puncheons and fermented with brettanomyces for around 8 months. Afterwards, it's returned into stainless steel fermenters before grape juice and flowers are added for additional aging. The end result is clocks in at 7.1% ABV (alcohol by volume) and has notes of floral and white wine throughout.

Released this Friday, the brewery is also featuring a Prix-Fixe dinner in case your Valentine’s Day plans are undecided or worse, requiring a solo experience. Exclusively at the Glendover location at 14021 NE Glisan Street, the brewery and restaurant provided the following menu.
