Over 2-years later, Four Winds Brewing releases Bramble. A mixed-culture Rye Ale with 1000 lbs of blackberries and chamomile.
Aged in the wine barrels for two years with a cocktail of Brettanomyces and lactic acid-producing bacteria, brewer Brent Mills is ready to share his newest beer. Bramble as they call the beer, get’s it namesake from the shrubs from which the blackberry fruit, aged alongside this mixed-culture beer, originates from. After two years, 1000 lbs of B.C.-grown Himalayan blackberries and chamomile combine with this rustic Rye ale, in stainless steel tanks for 6 weeks. Finish its journey, Bramble matures four additional weeks, in the bottle, before being put on the shelves.
Sharing his thoughts on this beer, Brent Hills says this.
Bramble is a mixed-culture barrel-aged rye ale with blackberries and chamomile. This dry, tart ale is a deep purple with subtle notes of chamomile and a heavy hand of BC wild blackberries. Bramble was aged in barrels for 2 years before it was blended and conditioned with the berries flowers. With the use of whole fruit, some blackberry sediment will occur.
At 6.6% Alcohol By Volume and 6 IBU; Bramble has notes of subtle chamomile, cinnamon, mulled wine, before notes of tartness, and red ripe fruit come to mind. Overall, this beer will pair nicely with venison sausage, duck breast, soft cheeses, pâté, or cured meats.
