Seattle's Hellbent Brewing Company releases an imperial india red ale and a coffee pilsner.

December, despite its affiliation with bacchanalia, relaxation, and of course, snow, apparently hasn't infected the motivation of the brewers at Hellbent Brewing Company. Announced the first week in December, the brand is releasing two new beers starting with one already out and another in less than four days.

Local Celebrity IIRA (Imperial India Red Ale). Starting with an underappreciated style of beer, the Imperial India Red Ale, the brewery has released a beer that pays homage to the brewery's mascot mutt, Stephen. Like the specters which haunt derelict accommodations, this almond-colored labrador retriever has greeted guests either as a living doormat or as a garden variety beggar looking for food truck leftovers. Oh, and the beer sounds pretty cool too.

Starting with a base of Vienna, Munich, caramel steam 40L, special B, and pale malt, Local Celebrity IIRA greets your eyes and mouth with sweet flavors and a sunset-like color. Before long, the brewers add a copious amount of Amarillo, Azacca, Citra, Strata, and Simcoe hops to the party. The result is a beer that greets you with an 8% demeanor with around 64 IBU. Now on draft at the Hellbent Brewing Company's taproom.

Not to be outdone, the brewery has announced the upcoming arrival of their Cedar & Spokes Coffee Pilsner. Brewed in collaboration with Belltown local, Cedar & Spokes, the brewery takes their flagship Northwest Pilsner and combines it with Cedar & Spokes dark roasted, Myanmar catuai coffee.

Starting with North American malts paired with local Mt. Hood and Meridian hop, Northwest Pilsner challenges your definition of a Pilsner with it's "crisp, dry finish and slight bready malt flavor typical of the style." By itself, Northwest Pilsner is a near sessionable 5.2% ABV and with only 32 IBU. This is probably why the brewery sought Cedar & Spokes' Myanmar catuai coffee with its notes of "caramel, lemon and tangerine". Look for Cedar & Spokes Coffee Pilsner to be on draft, this Sunday, December 8th.

About Hellbent Brewing Company

Hellbent started with three of us – Jack Guinn, Chris Giles and Randy Embernate – longtime friends and restaurant industry veterans. For us, starting Hellbent was the natural (and the coolest) thing to do, growing directly out of our experience and our love of beer. For years we home-brewed and toiled over our business plan. Then, we met Brian Young – award winning brewer, co-owner and fast friend – who turned out to be the missing link. Within a couple months, we were on the hunt for the perfect location.

We wanted our brewery in Lake City, where Chris and Jack already called home, to contribute to the growing beer scene here. When we stepped into the old CM Hopkins building for the first time, we knew we had found our venue.
