Collaboration between brewers? Happens all the time. Collaboration between a brewery and a restaurant? Occasionally. A collaboration between a brewery, a hot condiments chemist, and a beer and hot sauce bar? There’s always a first time. Welcome to the release of “Pretty Hot Sauce: Pour Some Spice In Your Face”, a collaboration between Ecliptic Brewing Company, The Show Hot Sauce, and Alefire Craft Beer and Hot Sauce Bar.

Released this past weekend at all three locations, this unique collaboration joins Ecliptic Brewing Company’s Capella Porter, Scotch bonnet peppers fermented in Ecliptic’s proprietary house lacto yeast, to produce a spicy sauce that might make you see stars. 

“We were really excited when our friends at AleFire and The Show reached out to us about this project,” says Ecliptic Brewing’s Executive Chef, Michael Molitor. “Sam [from The Show] and I discussed various chili combinations and, of course, tasted some of our beers. Capella Porter proved to be a great foundation. I was looking for a deep red and complex sauce with a solid heat level and a little bit of funk from fermentation...and Sam absolutely nailed it!”

A multi-award winning beer, including winner of Bronze at the 2016 World Beer Cup and the 2020 Oregon Beer Awards, Ecliptic Brewing Company’s Capella Porter is a pub favorite. A beer with notes of chocolate and caramel, merge with American hops (Cascade, Centennial, Chinook, and Nugget), to create a lively porter worthy of its namesake star (found in the constellation Auriga).

Coupled with the fermented Scotch bonnets, Alefire and The Show bring the assist to “Pretty Hot Sauce: Pour Some Space In Your Face”, providing a sweet tanginess from the addition of red Serrano and Fresno peppers, plus some “umami goodness” courtesy roasted onions and garlic. Finally, those with a trained palate might pick out the natural smokiness emanating from the Chili de Arbol and California peppers.
