Breakside Quiesence

Cut from the same cloth as our B-Sides releases of 2016 and 2017, Breakside Sour marks our first time releasing our award-winning barrel-aged sour and wild beers to wide distribution.

These beers require at least 9 months, if not longer, to make, and the average "age" of each beer is about 12 months. Each of these beers is the result of a complex blending process: rather than brewing and packaging a single batch, the finished beers in this series are designed after they have spent months in oak, when we pull from multiple sources and barrels to create unique blends.

For us, these beers are labors of love. Blended wood-aged wild and sour beers are not what "keep the lights on" at Breakside. We are motivated to make these beers because we find them challenging, beguiling, and complex. We think that you'll find that this process of brewing base beers, aging the beers in different vessels, and blending them together to hit a particular final kaleidoscope of flavors is worth the effort.

Quiesence means a state of stability, inactivity, or prelude. We think it's an apt descriptor for the quiet, languid beginnings of mixed culture fermentations. It also applies neatly to the long aging periods these beers require and the unique homeostasis that our house cultures achieve after blending. This beer is a blend of 13 casks of wood-aged sour beer brewed in November 2017 and housed for a year in Archery Summit Pinot Noir barrels. Enjoy notes of sandalwood, light stonefruit, and mild oak in this balanced mixed culture sour.
