In the category of last-minute ideas for January, Elliott Bay Brewing Company’s cellar manager has something you might enjoy. With a focus on spontaneous and mixed-culture, fermented beers, the brewers and cellarmen of Elliott Bay are pleased to announce the upcoming release of Spontaneous: Cabernet ‘17. 

No doubt it wasn’t the first part of the name that got your attention but in fact the year - 17. As a sort of truth in advertising, the brewery has resisted the urge to open their prized barrels, to enjoy and release this uniquely blended ale. Don’t believe us, here’s what the brewery had to say. 

For this beer, we knocked out our golden base straight into barrels packed with Washington grown Cabernet grapes, and allowed the native cultures living on the grapes to ferment the wort into beer.  The beer then matured in the barrels, on the grape skins, for 8 months before being blended together for release. Beyond their wild culture, the grapes added a light pink hue, noticeable tannin character, and acidity to our beer.

Released in the next couple days, the brewery has dispatched only 95 bottles of this beer, to be distributed to their three pubs (in Burien and Seattle neighborhoods West Seattle and Lake City), and their sister location, Brother Barrel. 

Should you visit Brother Barrel, not only will they entice you to enjoy glasses of this beer but a limited menu, specially designed for this beer will also be showcased. Options include a Belgian-style beef carbonnade, featuring beef chuck braised in brown ale with carrots, mushrooms, stone ground mustard, and served with fried fingerling potatoes. 

A gold medal winner at the Washington Beer Awards, Spontaneous: Cabernet ‘17 awaits your next visit and hopefully it will be this Thursday, January 30th. Stop in soon, to enjoy this 6.5% blended beauty, with only 5 IBU (international bittering units.
