It's our favorite season in the PNW. Farms throughout the Yakima Valley are bustling as bines are cut and hops are harvested.  We are fortunate to have been invited to two luminaries of the hop industry to choose fresh from the field Simcoe hops are Carpenter Ranches and Citra at Perrault Farms. Using 20 pounds of field fresh wet hops per barrel picked less then 8 hours beforehand, Now You're Swimming is dripping wet with lupulin dreams and overflowing with lemon cake, passionfruit, and pine.
