Swank Restaurant invites you to join us for a journey with Buoy as we celebrate the release of the 2020 bottling of Love Lost At Sea. Seating will be limited and the atmosphere intimate as we have a rare opportunity to taste three consecutive vintages (2018, 2019, 2020) of this celebrated Barleywine. Executive Chef Brian Benedetti has devised an incredible menu that will offer fresh bright flavors of the PNW, rich offerings of the local waters, and a main course meant to bring the group together as a family. 1st course: Radicchio Salad - Apple-Dijon vinaigrette, shaved red onion, candied hazelnuts, apple chips
2nd course: Saffron Orecchiette- Manila clams, mussels, salt cod, calabrian chili tomato sauce, bread crumbs
3rd course (big family style presentation): Roasted Porchetta- Carlton Farms belly and loin, fennel pollen, orange zest, garlic, rosemary, horseradish gremolata Served with sides of: Confited fingerling potatoes and cipollini Grilled Broccolini Warm farro salad
