This wheat based farmhouse style beer was fermented with a blend of wild brewer's yeast and two Saison strains, then aged on fresh lemon zest and farm-grown coriander in a mix of wine and bourbon barrels. Citrus character from the spice and fruit dominate the aroma, and are complemented with the overripe fruitiness of the yeast and a dry finish.
