Gigantic Brewing is releasing the first beer from their "brett fermentation project".
Maturing a year and a half, Gigantic's Fantastic Voyage is a saison, fermented with both saison and brettanomyces yeasts, while aging in oak barrels for a year. Afterwards, it continues to mature for six-months, in bottles with help from some additional yeast which contributes to the beer's complexity.
It took over a year and a half to finish our Fantastic Voyage, but we’ve really enjoyed the journey. We think the finished beer is fantastic, and we expect you will as well.
Tasting notes from the brewery.
The flavor is of tropical fruits - with mango, pineapple with a subtle funk and a bouquet of floral hops. Fantastic Voyage is intensely drinkable with a refreshing tartness.
