Brewed with blend of three types of Kveik yeast, Everybody's Brewing and Stoup Brewing release The Devil's Science Fair.

If you are like the millions along the West Coast, you are no doubt inundated with images of people hosting virtual meetings or you yourself having been asked to take part in one. Unfortunately, with no vaccine in sight, the new “normal” is filled is virtual happy hours, takeout, and delivery. Owing to this unaccustomed exercise in consumerism, the brewers of Everybody’s Brewing in White Salmon and Stoup Brewing in Seattle aren’t letting social-distancing impede re-releasing a beer they made this past March.

This collaboration has been a long-awaited effort between the two breweries, and a very natural alliance. Both breweries take pride in the scientific, technical approach to beer production, while still enjoying the fun, innovative side of the industry. “Stoup’s motto is, ‘The art and science of beer,’ which is right in line with our mission here,” said Everybody’s Head Brewer, Adam McClure. We jumped at the chance to work with Stoup when the idea first came up at last year’s WA Brewers Awards. Says McClure of Stoup’s owner/brewmaster Brad Benson, ”I have a ton of respect for his approach to brewing and his vision of what craft brewing means to community, plus his beers are amazing.”

Brewed with the nordic yeast strain, Kveik, brewers fermented this beer at higher (than normal) temps while reducing the volume of yeast cells normally used in a Hazy IPA. The result is a beer that is vibrant, and a hazy gold, with notes of tropical fruit borrowed from a blend of Galaxy, El Dorado, and Citra hops. Besides this blend of hops, the brewery also used a blend of three Kveik yeast strains, which contribute to the beer's hazy IPA character. 

Kveik strains remain an intriguing ingredient and relevant player in the craft brewing industry. They have the unusual ability of running at a range of temperatures and pitch rates that would normally destroy other yeasts. Looking produce big, fruity esters, some brewers attempt to push towards the extreme ends of these ranges. 

Dubbed The Devil’s Science Fair, this Hazy IPA was originally to be exclusively sold on draft. Now with social distancing the norm, both breweries are planning to re-create this beer at their respective breweries, before canning half and the rest remaining in kegs.

Enter, Robyn Schumacher – friend, teacher and self-professed beer geek graduated Cicerone. She had the same dream. Fitting that Robyn’s infatuation with beer bloomed under the tutelage of a Biology degree. Robyn’s regard for all things hop and malt only deepened while her teaching career flourished. Brewing in her spare time was the final hook. Call it what you will – the stars aligning, simultaneous fermentation – Stoup Brewing was born. We’re thrilled to be a part of Seattle’s burgeoning craft beer community in Ballard’s Brewing District.
