Crux Fermentation Project releases their first koelscip beer - Gypsy Coolship

The word is koelschip which translated from its Dutch/Flemish name means coolship. Created to harvest the natural wild yeast found in everything around us, the coolship allows an adventurous brewer to attract and convince wild yeast to nourish themselves on a brewer's mixture of wort, water, and (occasionally) hops, thereby creating something as unique as the oxygen we breathe and the beer that we drink. Realizing they needed to punctuate the Fermentation Project in their name, Bend's "Crux Fermentation Project" enlisted the expertise of metal crafter Marks to create a coolship which would reside on a trailer, for the sole purpose of traveling throughout Bend and the nearby region harnessing the power of wild yeast.

But before the brewers at Crux could (literally) take their fermenter on the road, they parked their recently acquired trailer in the parking lot of the brewery. Much like an adolescent, learning to drive for the first time, the brewery's parking lot served as a safe space to acquire wild yeast. And after a cold winter night, the brewers provided a home inside a few wine barrels where it aged with its recently acquired foreign agents. The end result is a 3.7% Grisette, which had developed a bit of funky and subtle tart character.

Thankfully for those who cannot make the trip to the brewery's taproom, to enjoy this unique beer, the brewery is happy to announce the release of around 40 cases throughout Oregon. Bottled in 750ml vessels, the brewery hopes you enjoy this truly unique beer, complemented with a unique label from local Bend artist, Sweet Pea Cole.

Finally, don't fret if you miss out on this first edition as the brewery recently visited the Metolius Preserve, last month. Aging away in barrels as they speak, the brewery looks forward to seeing what the forest air provided.
