Four Winds Brewing Company is pleased to share the next beer to try now and stow away for later. Introducing Bosque, a tart farmhouse ale aged in Spanish cedar and blended with tequila-barrel-aged Saison, before resting on Granny Smith pomace.

Originally conceived on the farm, Farmhouse Ales were conceived on the farm from whatever yields were produced on the farm. Much like the seasons, no two editions of Farmhouse Ales were identical as consistent crop production was never guaranteed. Instead, the brewer/farmer might trade ingredients with a nearby farm or substitute barley where wheat was sufficient. The end result is a beer that is as rustic and curiosity-inspiring as the country roads traveled for the first time. Today, these techniques are sometimes used, in an age when access to quality ingredients nearly guaranteed.

Paying homage to the sore backs, calloused hands, and patience of their forefathers, the brewers of Four Winds spent years blended various barrels, all in an effort to produce a beer which reflects those old-world techniques. The result is a beer that has been summed up as "instilling a complex aroma with a dry, tannic mouthfeel". Interestingly enough, the brewers also mention that one might be inspired to think of cigar boxes or a walk-in humidor.

The best beers are the ones that take time to make. We've been working on our barrel program since day one and every batch that we release gets a little bit better. Our brewers work tirelessly to achieve certain flavour profiles by combining the right ingredients with the right vessels for aging. This is where Bosque comes in.

Interestingly enough, this beer was called "Wood Barrelson" mostly because the name inspired laughter. But maturity and cleared heads selected the Spanish name for "wood" once the beer passed between the brewers' lips and into their consciousness. But really, it was the Granny Smith pomace, from Summerland's Nomad Cider, that helped Four Winds maintain their record for sourcing only local ingredients.

Furthering the discussion, the brewers suggest you try this with white anchovies, grilled chicken hearts, olives, mussels, calamari, ham croquettes, cured meats, or a spicy potato omelette.
