We’re excited to head into the new month with a new Executive Chef at the Bistro. Many of you already know Steve Pickell, since he’s been with Airways for a while. With Chef Ken’s departure, Steve has stepped into place, bringing years of fine dining experience from Washington D.C., New York City, and San Francisco. Steve was also an award winning Executive Chef at Thornton Winery in Temecula, CA for 17 years, where he specialized in food and wine pairings. 
Steve’s cooking style stems back to his early days in DC, where he worked at Restaurant Nora, famous for organic, seasonally prepared food with a menu that changed daily. He’s looking forward to preparing locally inspired cuisine with an emphasis on using seasonal ingredients that pair with the variety of craft beers brewed by Airways Brewing Company. 
While many of our old favorites will still be available, we’ll also have a set of specials that will run through the season, starting this week. In addition to a rotation of hot, homemade soups and our famous flavorful pizzas, you’ll find Parmesan polenta with Italian sausage, wild sockeye salmon cakes, and creamy “beeramisu” made with our very own Chocolate Stout.
