Portland, Ore. ... Chef Michael Molitor of Ecliptic Brewing, a craft brewery and restaurant in Portland’s Mississippi neighborhood, will launch the restaurant’s new menu on Saturday, June 20 to coincide with the Summer Solstice. The menu features the freshest, locally sourced ingredients that make the most of summer’s bounty and offers plenty options to cool off in the warm weather.

“Our goal at Ecliptic has always been to create a quality food experience that is on par with John’s fantastic beers,” says Molitor. “To that end, we’re committed to offering a rotating menu of delicious and inspiring options that reflects what’s seasonal in our area.”

Highlights from the new menu include grilled shrimp with watermelon, feta, basil oil and pimente d’esplette, roasted eggplant puree with chickpeas, preserved lemon, sumac and housemade pita, grilled beer-brined pork loin with charred treviso and apricot-jalapeno chutney, and a chocolate creme caramel with seasonal berries.

Ecliptic Brewing is a reflection of founder John Harris’ co-passions of beer and astronomy, and the brewery takes its name from the yearly path the Earth takes around the sun. The food program celebrates this journey through the seasons by rotating the menu every six weeks based on the old world calendar. New menus are scheduled to debut for Samhian, Winter Solstice, Bridgid, Spring Equinox, Beltane, Lammas and the Autumnal Equinox.
