In a time when brewers are constantly collaborating with each other, Breakside’s Ben Edmunds was taking his inspiration from Portland’s top chefs for his own uniquely food inspired collaboration series. Among the best of these draft-only collaborations was Toro Red, made in collaboration with famed local chef John Gorham of Toro Bravo. For the first time ever, Breakside Brewery is scaling up production of Toro Red to a fall seasonal release available on draft and in 22oz bottles from October through November.
Toro Red description:
Our Fall Seasonal is a rich and complex Red Ale brewed in collaboration with Chef John Gorham, the mastermind behind some of Portland’s most popular restaurants, including Toro Bravo and Tasty n’ Sons. Notes of cherry, caramel, light smoke, and chili come through on the nose, and there is a refreshing herbal touch from the use of German hops that balance the beer. The dry finish and low bitterness make this an ideal food beer, and it pairs brilliantly with any number of seasonal dishes.
6.7% ABV. 34 IBU. Malts: Two-Row, German Smoked malt, British dark crystal, Victory. Hops: Hersbrucker

Suggested Food Pairings:
Tortilla Espanola with Piperade, Roasted duck with sunchokes and chanterelle mushrooms. Onion farrotto with pork shoulder and chicharron, Braised lamb with butternut squash, Ghoulash with egg noodles, Roasted mushroom and smoked mozzarella pizza.
