Industry News:Brooke and Luther Fedora releases "The Foodie's Beer Book: The Art of Pairing and Cooking with Beer for Any Occasion"

Both discussed and documented, the art of pairing beer (with food) is increasingly in popularity. Gone are the halcyon days of pairing a can of keystone ice with your favorite slice (of pizza). Instead the slice and light pilsner have been replaced with a half pint of vanilla ice cream, topped with 8 oz of coffee stout.

Riding the wave of sentiment, towards including beer, writers Brooke and Luther Fedora have published "The Foodie’s Beer Book: The Art of Pairing and Cooking with Beer for Any Occasion". With a mission to the reader to “never cook with a  beer you wouldn’t want to drink.”, the book is filled with recipes and guidance.

Gastropub owners and Culinary Institute of America graduates Brooke and Luther Fedora explore the many ways beer can enrich a dish or entire meal in THE FOODIE’S BEER BOOK, which offers no-fuss, high-flavor recipes and pairing suggestions for every season and palate.

In The Foodie’s Beer Book, recipes are broken down by season and region, and grouped together in themed menus, so you can drink your way through the calendar year—and around the world! Notable menus for summer include:


  • The Beer Wedding—Milk Stout Ice Cream Cake with Caramel Sauce; Smoked Beef Tartar with Lemon Sauce
  • Lobster Bake—Blueberry Beer Cake; Creamy Potato Salad and Dijon Vinaigrette


Also included within its pages are recipes for home brewing, as well as cooking techniques (including baking, de-glazing, frying, grilling, steaming, and poaching with beer).

Brooke and Luther Fedora graduated from the Culinary Institute of America and worked in London and New York City before settling in Charlottesville, Virginia, where they are now the chef-owners of the Horse and Hound Gastropub. Most recently Luther Fedora was voted “Best Chef” in Charlottesville and Albemarle County, Virginia, by the Charlottesville Albemarle Convention and Visitors Bureau for 2014
