Beer Release: WA: Coming Soon … Saison of the Witch. An Elysian Brewing / Tom Douglas Rest.’s Prosser Farm collaboration

image of Saison of the Witch courtesy of Elysian Brewing With October fast upon us and already the sightings of the color orange we are happy to announce something we have known for a little while.

Elysian Brewing and Tom Douglas Restaurants' Prosser Farm have teamed up to create Saison of the Witch, a pumpkin saison--just in time for Oktoberfest activities and harvest pairings in the restaurants.

About Saison of the Witch

The brew was made from 120 pounds of roasted Baby Pam pumpkins, from just across the pass in sunny eastern Washington. Fennel fronds and bulbs also went into the mash to lend some aromatics and a soft herbal background. This saison will make an exciting showing with a medium amber-peach color and a 5.6% ABV.

Already released at the Brave Horse Tavern Oktoberfest Dinner (9/20) you should expect to find this at many of the Tom Douglas restaurant throughout October (or till they have emptied all the kegs). It’s a few days away (10/2).

But there is an added twist to this release announcement.

Customers can expect to find pairing menus and harvest celebration functions highlighting the close of the season at the farm, and the beginning of gourd-worship.

About Prosser Farm

Prosser Farm is a 5 acre garden, managed and cultivated by Tom's wife Jackie, her father and stepmother, and a team of amazing farmers, including a cook and server from the restaurants. The farm provides the restaurants with organically grown vegetables for six months out of the year, with the heavy-hitters being cucumbers, green beans, and heaps and heaps of tomatoes. This year to date, the farm truck has delivered over 12 tons of produce straight to the Tom Douglas kitchens. Along with being a home for family, friends, and staff, Prosser farm is a way to stay connected with our food (and beverage), from the time it goes into the ground until it reaches our customers.
