As they have done in the previous months, the Full Sail Brewmasters Dinner is the breweries continued invitation to the community at large to educate the public on mis-perceptions of food pairing with beer. As we reviewed the menu featured below we couldn’t help but be jealous of those who live in Portland, Vancouver, Stevenson, and Hood River.

Cost is $25 and space is extremely limited with the beers served until they run out.

Smoked Chicken Hash Wrapped in Puff Pastry paired with Full Sail Amber

  • The savory chicken hash paired with the subtle sweetness of its apple cider and wort reduction brings out Amber’s mid-palate caramel maltiness, while the chicken’s delicate smoky undertones amplify Amber’s green hop aromatics and clean, green hoppy finish.

Roasted Beet Salad WITH Candied Pecans AND Creole Buttermilk Dressing paired with Full Sail LTD 01

  • The earthy sweetness of the roasted beets helps to emphasize LTD’s green hop flavors, while the candied pecans bring out a dusty dry caramel malt toastiness in the beer’s mid-palate. The subtly spicy buttermilk dressing pairs excellently with LTD’s long, clean malty finish.

Roasted Rack of Pork with Bacon Sage Stuffing AND Blackberry Bourbon Sauce paired with Session Black

  • The pork, marinated in sage, rosemary and thyme, pairs excellently with Session Black. The roasted, grill flavors of the pork are complimented by Session’s subtle roasty character, while the herbal notes from the marinade enhance Session Black’s clean caramel and chocolate finish. The smoky, sage dressing helps to bring out Session Black’s clean coffee/chocolate mid-palate flavors and mild green hop undertones.

White Chocolate Banana Cream Pie paired with Full Sail Imperial Stout

  • The initial creamy banana flavors bring out a dry chocolate malt character in the beer which is reminiscent of malted milk balls. As you continue eating the dessert, flavors of espresso and dry cherries begin to emerge from the beer and this eventually leads to a clean bitter finish that fades to elegant dark chocolate flavors.
