(OR) Deschutes’ Chefs’ Challenge Winner Announced

Portland, OR - Last Monday, six of Portland’s finest chefs convened at the Deschutes Brewery pub in Portland’s Pearl District for a special challenge: the very best food and beer pairing of the evening. The event, which was a fundraiser for Morrison Child and Family Services (www.morrisonkids.org), drew 100 attendees who enjoyed a wide range of foods and beers over several courses. In the end the panel of experts decided who best demonstrated what an artisan beer and food pairing should be.

Participating chefs and their dishes included:

  • Chef Jeff Usinowicz, Deschutes Brewery
    Beer: Cascade Ale

    · Cortes Island Oysters on the half shell with a hop infused ponzu sauce, quail egg yolk, and tabiko caviar
    · Ale pretzel with a warm chanterelle mushroom taleggio cheese sauce
    · Hop and lime marinated wild gulf prawns with a mango glaze
  • Chef Pascal Chureau, Fenouil
    Beer: Miss Spelt Hefeweisen

    · Rabbit Loin Crepinette
    · Chanterelles faro risotto.  Bone marrow butter. 
    · Maple syrup and bourbon gastrique
  • Chef Adam Berger, Ten 01
    Beer: Dubel Ale
    · House made duck and hazelnut sausage with cranberries
  • Chef Paul Bachand, Farm to Fork
    Beer: Long Shadow Black IPA

    · Smoked Trout, Leek and Potato Mason Jar Pie
    · Fresh Herb and Winter Radish Salad
  • Chef Kurt Spak, Alba Osteria
    Beer: Jubelale
    · Agnolotti al Plin with Oregon Black Truffles
  • Chef Cathy Whims, Nostrana
    Beer: Obsidian Stout
    · Cauliflower Sformato with Oregon Black Truffles
  • Pastry Chef Jill Ramseier, Deschutes Brewery
    Beer: The Abyss
    · Sweet and salty peanut butter bon bon with root beer meringue

The judges – Gary Fish of Deschutes Brewery, Amy Faust of the Wolf 99.7, Cole Danehower of NW Palate Magazine, Alan Kropf of Mutineer Magazine and John Foyston of The Oregonian – were “utterly amazed” by the “wonderfully composed dishes which played off each of the beers.” But, in the end, decisions had to be made.
