First course:

Beets, caciotta di bufala, dried blueberry mostarda, pear, pistachio

Paired: snow cap raspberry

Second course:

Duck gnudi, braised duck leg, dark chocolate, cocoa nib, oil cured olive

Paired: primordial noir

Third course:

Boar collar, smoked onion soubise, cherry relish, brown butter roasted carrots, lovage, beer jus

Dessert course:

olive oil cake, malted strawberry gelato, strawberry chocolate mousse, pineapple gastrique
