Adversus Unfiltered Double India Pale Ale
Prodigiously hopped yet nimbly brewed with pilsner malts, Adversus ultimately achieves the improbable: a big, bold IPA made for summertime sipping. A hard-charging blend of Pacific Northwest hops leads the way, loading the nose with notes of stone fruit, pineapple, mango and earthy pine resin. Meanwhile, the use of traditional pilsner malts adds levity and dryness to the palate, allowing for a refreshing texture through the finish. The result is a double IPA that is high on hop aromas, balanced in bitterness and perfect for the long, warm days of summer

DBA British Pale Ale
DBA—a.k.a. Double Barrel Ale—is the trailblazing flagship beer that started it all for us back in 1996. Partially fermented in our patented Firestone Union oak-¬‐barrel brewing system, DBA quickly took the Central Coast by storm and set the pace for future beers to come. Today, DBA is regarded as a California classic, and stands as an iconic tribute to traditional cask-¬‐fermented English ales. Pale malts create a smooth middle with ribbons of caramel, English toffee and toasted oak.

Imperial version of Walker’s Reserve Porter Batch 5000. brewed with German rauchmalz. Imperial Smoked Porter • ABV: 10.0% • IBUs: 50 Imperial Smoked Walker’s Reserve is a throwback to an original staple in early Firestone history: Walker’s Reserve Porter. The brewers enhanced the original recipe and incorporated the addition of Weyermann Beech smoked malt as a majority of the base malts, lending a noticeable yet subtle smoke profile complementing the rich chocolate and caramel flavors. The use of rolled oats in the mash provide for a thick and chewy body. Aged in bourbon barrels


Sour, Dessert Course
Soft and Fluffy 2016 Krieky Bones Sour Beer Cherry Sorbet on House-made Graham Cracker and Almond Whipped Cream

Krieky Bones 2016 5.7%- What began as a birthday gift, took on a life of its own. Proprietor David Walker cornered us one day and requested a sour cherry fermented beer for his 50th birthday. Done. A handful were sold at a Liberation, after which our loyal patrons demanded more. VoilàD! This beer begins its life as a Flanders Red style beer aged 24 months in a 2200 gallon French oak foeder. Sour Montmorency cherries are added and allowed a secondary fermentation. The aroma is of cherry pie complete with flavors of pie crust and spicy notes. Vienna malt notes give way to an assertive acidity, and a bright carbonation. A santé!

Walker's Cuvée
Proprietor David Walker travels the earth tirelessly expounding upon the virtues of our brewery and beer. Barrelworks decided to create a “private” cuvée for him to serve while stumping on the road. The blend will change as we see fit. Walker’s Cuvee Batch #1 is a Flanders inspired beer that receives a generous dose of our wild microflora and allowed a secondary fermentation and maturation for over a year in 2200 gallon French oak foeders. The Vienna Malt shines as part of the beer’s overall complexity. Cinnamon, dried raisins and slight caramel flavors mingle with tart cherries, peaches and some earthy funk. Vanilla and white pepper lurk in the background, and an oak dryness teams up with a firm acidity to create a delicious and quenching beverage. Don’t miss out on this one-it is extremely limited. style
